Our beautiful Pavé of Venison loin steaks challenge even the best beef fillet steak for both texture and flavour. It is best cooked RARE or MEDIUM. Holker estate wild venison is sustainably harvested within 2 miles of Holker Hall, which is also home to our Lake District Food Hall. The deer harvested are a mixture of roe and red deer selectively taken from the estate woodlands and arable fields and processed by the deer manager in the estates deer larder. He delivers it direct to us at A Day's Walk on an exclusive basis, for you to enjoy!
