Our butchers, Airey's, are specialists in Lakeland Herdwick sheep. The Herdwick has recently been awarded a PDO (Protected Designation of Origin), which means that only Herdwick lamb that has been born, reared & prepared in Cumbria can be called Lakeland Herdwick Lamb. There's no better centrepiece for Easter lunch this year!
The Lakeland Herdwick, otherwise known as the Guardian of the Fells is the iconic sheep breed of the Lake District. Lakeland Herdwick has Protected Designation of Origin (PDO) status and can only take this name if it has been born, raised and slaughtered in Cumbria.
Our organic Lakeland Herdwick lamb is raised on the northern slopes of Skiddaw on fells that have been herbicide and pesticide-free for millennia. Hugely sought after by michelin-starred restaurants this quality of lamb, with its distinctively strong flavour, is too often whisked off to London’s fine-dining scene!
