Smoky Barrel Jerky is lovingly produced using prime cuts of beef from
animals that are grass finished and reared on local farms within a 20-mile radius of the smokehouse based at Witherslack in the beautiful Lake district national park.
Our wood and dust come from the local Witherslack woodyard 1 mile away and our charcoal from the coppice co-operative 6 miles away. We think our processes are more ethical, resulting in lower stress for the animals, food miles, supporting local as well as a reduced carbon footprint. Most of our packaging is bio-degradable too, and we are working hard on the rest!
We start by hand washing, trimming and then slicing the beef. Depending on
the flavour we then marinade the strips with the best quality ingredients and
spices for 48 hours. Then comes the racking and air drying for 24 hours before
finally being taken to our 108-gallon ex Sherry cask barrel smokers. We have
one for each flavour and our Trail/gluten free jerky has its own dedicated
smoker to ensure no contamination.
Using charcoal from sustainable sources, the racks of beef are then
traditionally hot smoked with smouldering wood chips and dust for up to 12
hours. This results in Jerky that is succulent, delicious, comforting and packed with healthy energy-boosting protein
