Rump Steak, Airey's rare and heritage breed meats
Many top chefs consider this cut to have the greatest taste of all the steaks when cooked right and heritage breed rump is the best there is. A top tip is to take it out of the fridge at least 20 minutes before cooking to ensure it cooks evenly, and let it rest on a warm plate for 10 minutes when it comes out of the oven. Then enjoy!
